Agar-agar is a vegetarian gelatin derived from seaweed. It's commonly used in a range of dishes as an alternative to animal-based gelatin, including puddings, mousses, jellies, ice cream, gummy candies, and cheesecake. It sets much firmer and can feel less jiggly than real gelatin.
Usage Tips Dissolve one bag of agar powder in 1800 ml of water. Boil over medium to low heat for 10–14 minutes until fully dissolved.
